Ingredients

  • 225g cold, diced butter
  • 350g plain flour
  • 100g golden caster sugar
  • pinch of salt
  • Jar of mincemeat
  • 1 small egg to glaze
  • icing sugar to dust

 

Method

  1. Pre heat the oven to 200°C/fan 180°C/gas mark 6.
  2. Rub the butter into the sifted flour until it looks like breadcrumbs
  3. Mix in the golden caster sugar and pinch of salt.
  4. Combine the pastry into a ball and knead it briefly.
  5. Roll out the dough and cut out rounds to line a greased cupcake tin.
  6. Spoon mincemeat into the cases, just enough to come almost all the way up the side of the pastry cups
  7. Cut out smaller rounds to top the pies, pressing the edges gently together to seal.
  8. Beat the egg and use it to brush the top of the pies.
  9. Bake for 20 minutes until golden.
  10. Cool and dust with icing sugar.
